Surviving summer potlucks and picnics
“You’re so good.”
“What’s this green thing?”
“Are you on some sort of rabbit-food diet?”
My family…when I show up to the picnic with a tray of veggies instead of potato salad.
They’re so German! Meat-and-potatoes, dumplings, black forest cake, pancakes!
My grandpa always jokes that he ate all the pie before I got there.
The thing is, I’m don’t want to be the “health-nut” daughter…I want to dive into the treats, too!!!
But I have a secret plan….a few tricks to make sure everyone enjoys the mean, AND to make sure I don’t over-do it on the desserts.
First, I put in a little extra effort to make the veggies taste AMAZING.
You can’t just throw a plate of zucchini on the table and expect people to dig in. A little dressing, spices, and an oven roasting can take your boring veg to a new level.
Here are my favorite ways to dress them up:
Nom Nom Paleo’s Cavolini Al Forno
These are the best Brussels sprouts I’ve had. Ever. Period. Life-changing baby cabbages…..I usually top them with soft boiled eggs instead of hard, but the vinaigrette is what really makes this recipe a winner.
Melissa Joulwan’s Turkish Chopped Salad
I sub in whichever crunchy veggies I have in my fridge, though the cucumbers are a key component. This recipe is a perfect match for simply grilled steak or roast chicken.
Primal Palate’s Pesto “Pasta” with Beef and Olives
This was my go-to recipe when I first cleaned up my diet. It’s been around the gym, the dinner table, and even come camping with me. Spaghetti squash is a great, neutral vessel for any tasty sauce. The olives are pretty crucial, but I often omit the beef for a simpler, lighter side.
Second! Eat the Veggies FIRST
Load up your plate with one or all of these amazing dishes the FIRST time you hit the chow line, and eat them before you start in on the other stuff.
You’ll eat some tasty, healthy food, AND you won’t have enough of an appetite to plow through 10 cupcakes at the end.
WANNA TRY THESE DISHES, DO A GREAT WORKOUT, AND MEET SOME AMAZING PEOPLE??
